Step 1
In a medium microwave-safe bowl, microwave morsels for 30 seconds to melt. Stir vigorously; if additional time is needed to melt completely, microwave in 10-second intervals and stir after each interval. Set melted morsels aside.
Step 2
In a small saucepan over medium heat, bring heavy cream to a simmer. Pour directly over melted morsels. Stir well. Add food coloring to create desired color and stir in to the glaze. Place glaze into refrigerator to cool and thicken slightly. Once glaze is approximately room temperature, remove glaze and cake from the refrigerator.
Step 3
Place cake on a cooling rack with a pan beneath it to catch any extra glaze drippings. Place a spoonful of glaze on the top of the cake, near an edge. Slightly spread glaze using the spoon and gently press a small amount of the glaze over the edge of the cake to create a drip. Move spoon over slightly and repeat to create additional drips. When the entire cake is covered in drips, cover center of top of cake with remaining glaze. Use additional garnishes as desired. Refrigerate finished cake to let the glaze set prior to serving, approximately 30 minutes.
