Step 1
Preheat oven to 400° F. Place baking rack on a rimmed baking sheet. In a small bowl, combine evaporated milk, 1/4 teaspoon salt, 1/4 teaspoon paprika. Add chicken, cover, and let marinate in refrigerator. While chicken is resting, combine remaining spices and panko in a shallow bowl or on a plate. One at a time, dip the chicken pieces into the breadcrumb mixture and coat thoroughly. Place chicken onto prepared rack.
Step 2
Bake 20 minutes, then flip chicken to other side. Continue baking for an additional 15-20 minutes, or until chicken is cooked through to 165° F. Remove from oven and set aside.
Step 3
To make the gravy, melt butter in small saucepan. Stir in flour, salt and spice. Gradually add evaporated milk and water. Cook over medium heat, stirring constantly, until mixture comes just to a boil. Remove from heat and add maple syrup.
To Prepare the Complete Dish
Place 1 waffle on plate, top with 2-3 chicken tenders. Top with some of the gravy and optional maple syrup. Repeat for remaining portions.
