INGREDIENTS

Step 1

Preheat oven to 350° F.

In a large mixing bowl combine sugar, cocoa powder, and salt. In separate bowl whisk eggs vigorously; add melted butter and evaporated milk. Whisk egg mixture into sugar mixture to combine until smooth.

Pour batter into pie crust and place on a baking sheet. Bake in oven on center rack for 45-55 minutes.

Pies will be slightly loose in center when they come out of the oven. Allow the pies to cool completely before serving (about 2 hours).

FOR HOMEMADE PIE CRUST: In a large bowl mix flour, sugar, and salt.

Add cubed butter and cut in using a pastry cutter or 2 forks until mixture resembles pea size pieces.

Measure out ice cold water and add to bowl 1 tablespoon at a time, stirring after each addition.

Step 8

Place pie dough on a lightly floured surface and fold to incorporate flour.

Step 9

Flatten dough out into disc and wrap with plastic wrap; refrigerate for 2 hours or up to 3 days.

Step 10

When ready to make pies, roll out dough with rolling pin on a lightly floured surface.
