In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon. Set aside. In a large bowl, combine mashed bananas and oil. Add sugar and mix to combine. Then add eggs, evaporated milk and vanilla. Mix thoroughly. Mix dry ingredients into banana mixture. Stir in optional morsels or nuts. Portion batter into muffin tins.
Bake muffins for 15-20 minutes, or until baked through and spring back when touched. Remove from oven and let cool in pans on cooling rack for 10 minutes. Remove from pans and let cool completely directly onto cooling rack. While muffins are cooling, combine glaze ingredients and drizzle on top of baked muffins.
