INGREDIENTS

  • CAKE:
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3/4 cup packed brown sugar
  • 4 tablespoons unsalted butter
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 1/2 cup milk
  • 1 large egg
  • TOPPING:
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter, softened
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

MAKE IT

Step 1

Preheat oven to 350° F. Prepare an 8-inch-square baking pan with baking spray. Set aside.

Step 2

In a medium bowl, combine flour, baking powder, and spices. Set aside.

Step 3

In a large mixer bowl, combine brown sugar and butter until combined and creamy. Mix in pumpkin, milk, and egg. Add flour mixture and mix just until combined.

Step 4

In another medium bowl, combine topping ingredients. Use a fork to combine until mixture looks like a coarse meal.

Step 5

Pour batter into prepared pan. Top with streusel topping.

Step 6

Bake for 50-55 minutes or until top is golden brown and baked through. Let cool on cooling rack until room temperature.
