- ●1 1/2 cups old-fashioned oats
- ●2 large eggs
- ●3/4 cup LIBBY'S® 100% Pure Pumpkin
- ●1/4 cup vanilla Greek yogurt
- ●1/2 cup non-dairy milk or milk of choice
- ●1 teaspoon vanilla extract
- ●2 teaspoons pumpkin pie spice or ground cinnamon
- ●1 teaspoon baking powder
- ●Pinch of salt
MAKE IT
Step 1
Add all of the ingredients to a high-speed blender and blend until well combined. If the batter is too thin and will not pour out of the blender, add 1-2 tbsp. of milk and blend again to thin it out slightly.
Step 2
Use a ¼ measuring cup to portion out the batter onto a greased skillet or pancake griddle. Flip to the other side when the edges start to slightly bubble. Repeat with remaining batter.
Step 3
Top pumpkin pancakes with banana slices, pecans, and maple syrup. Enjoy!
