Mini Chocolate Cupcakes
- ●1 package (15 ounces) gluten free devil’s food cake mix
- ●Large eggs
- ●Libby's® 100% Pure Pumpkin
- ●1 3/4 cups gluten free chocolate frosting or prepared Chocolate Lover's Frosting (recipe on this site)
Prepare cake mix according to package directions using water and eggs as stated. Use half of the butter or oil called for and use an equal amount of pumpkin as butter or oil. Spoon into 42 paper-lined mini muffin cups.
Bake at 350° F for 15 minutes or until wooden pick inserted in cupcake comes out almost clean.
Frost each cupcake with 2 teaspoons frosting.
