INGREDIENTS
- 3/4 cup organic or washed raw brown sugar
- 3 tablespoons tapioca flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 cup NESTLÉ® CARNATION® Almond Cooking Milk
- 1 cup water
- 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
- 1/2 teaspoon vanilla extract
MAKE IT
Step 1
Whisk brown sugar, tapioca flour, cinnamon, ginger and cloves in medium sauce pan. Slowly stir in almond milk, water and pumpkin until combined.
Step 2
Cook over medium heat, stirring constantly, for 10 to 12 minutes or until mixture thickens. Stir in vanilla extract. Spoon pudding into custard cups or ramekins. Serve warm or cover with plastic wrap pressed on top of pudding or refrigerate until ready to serve.
