Easy "Impossible" Individual Pumpkin Pies

LIBBY'S® 100% Pure Pumpkin 15 oz
NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk 12 oz
- Nonstick cooking spray
- ½ cup all-purpose flour
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- 1 cup Libby’s® 100% Pure Pumpkin
- ½ cup granulated sugar
- ¾ cup Nestlé® Carnation® Evaporated Lowfat 2% Milk
- 2 large eggs
- Whipped cream (optional)
- Ground cinnamon (optional)
Line 12 standard-size muffin cups with foil liners; spray with cooking spray.
Combine flour, pumpkin pie spice, salt, baking powder and baking soda in large bowl. Whisk pumpkin, sugar, evaporated milk and eggs in separate large bowl until smooth. Add flour mixture to pumpkin mixture; whisk until smooth. Spoon about ¼ cup mixture into each muffin cup.
Bake at 350° F for 20 to 25 minutes.
Top with freshly whipped cream, if desired. Dust with ground cinnamon.
