• 4 large eggs
  • 3 tablespoons NESTLÉ® CARNATION® Evaporated Milk
  • Salt and ground black pepper to taste
  • 3/4 cup vegetables, cooked and chopped (we suggest bell peppers, onions and mushrooms)
  • 1/3 cup cooked bacon, grilled chicken, or other protein
  • 1/4 cup shredded cheese (we suggest cheddar, Jack, and Swiss)
Step 1
Preheat oven to 350º F. Grease 6-well muffin tin with baking spray. Set aside.
Step 2
Place eggs, evaporated milk, salt and pepper in a large bowl. Whisk until combined. Stir in vegetables, protein, and half of the cheese. Once the mixture is completely combined, divide between the 6 muffin tins. Top with remaining cheese.
Step 3
Bake egg bites for 18-22 minutes, or until edges are just golden and egg is cooked through.
Step 4
Remove from the oven and place the tin on a cooling rack. Let the egg bites cool for 5 minutes. Run a knife around the edge of the bites to loosen from the tin and then remove them. Enjoy immediately or place in the refrigerator and reheat at a later time for an easy, protein-rich snack!
