INGREDIENTS

  • 1 pound dry corkscrew or bowtie pasta, cooked and at room temperature
  • 3/4 cup plain Greek yogurt
  • 1/4 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1 tablespoon lime juice
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 tablespoon finely chopped jalapeño
  • 1 cup cherry tomato halves
  • 1/2 cup corn kernels
  • 1/4 cup finely sliced red onion
  • 1/2 cup chopped green onions

MAKE IT

Step 1

Place cooked pasta in a large serving bowl. Set aside.

Step 2

In a separate mixing bowl, combine yogurt, evaporated milk, lime juice, cumin, chili powder and salt. Mix to combine. Pour sauce over pasta and toss to coat. Add beans, vegetables and green onions to bowl and toss to combine. Chill in refrigerator for 20 minutes or until ready to serve.
