- ●1 cup diced onion
- ●2 bags (10 ounces each) frozen butternut squash, thawed
- ●1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
- ●2 cups sweet potato, peeled and diced
- ●2 1/2 cups chicken stock
- ●1 teaspoon salt
- ●1/2 teaspoon ground cinnamon
- ●1/2 teaspoon ground cumin
- ●1/2 teaspoon garlic powder
MAKE IT
Step 1
Place all ingredients into a large heavy-bottomed pot. Stir and bring to a simmer over medium heat. Turn heat to medium-low and simmer 25-30 minutes or until potatoes are fork tender.
Step 2
For a smooth soup, use an immersion blender or stand blender to purée the soup prior to serving.
