Steak Fajitas w/ Lime Crema

  • 1 pound flank or sirloin steak for grilling
  • 1 yellow onion, sliced
  • 1 red pepper, sliced
  • 1/4 cup lime juice
  • 1 cup olive oil
  • 2 cloves garlic, diced
  • 2 teaspoons jalapeño, diced
  • 1/2 teaspoon cumin
  • 1/4 cup fresh cilantro, chopped
  • to taste salt and pepper
  • 1/3 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup sour cream
  • 3 teaspoons lime juice
  • 1/2 zest of lime
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • Flour or Corn Tortillas, Salsa, Shredded Cheese, Guacamole


COMBINE lime juice, olive oil, garlic, jalapeno, cumin and cilantro for marinade in a medium bowl. Place steak and vegetables in bowl and toss to coat with marinade. Cover bowl with plastic wrap and let marinate in refrigerator for 30 minutes.

COMBINE ingredients for lime crema in a small bowl. Cover with plastic wrap and let crema chill in the refrigerator until ready to serve.

GRILL steak to desired temperature/doneness. Let steak rest for 5-10 minutes off of the grill. Sauté vegetables and remaining marinade in a medium sauté pan over medium heat for 5-7 minutes, until onions are soft. Slice steak thinly and serve with sautéed vegetables, lime crema, warm tortillas, and accompaniments
