Carrot Ginger Soup

  • 1 cup 8 oz. NESTLÉ® CARNATION® Evaporated Milk
  • 1 cup onion, chopped
  • 1 Tablespoon fresh ginger root, grated
  • 1 pound carrots
  • 1 cube MAGGI Vegetable Flavor Bouillon Cube
  • 2 cups water
  • 1/2 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 Tablespoon canola oil


PEEL and chop carrots into inch long pieces. Pull thyme leaves off of stems. Grate ginger.

PREPARE MAGGI Bouillon cube according to package directions in a medium pot, add carrots, ginger and thyme to prepared bouillon and bring to a simmer. In a medium pan, sauté onion with canola oil until translucent, then add to bouillon, and salt and pepper to the mixture.

PLACE lid on top of pot and simmer over low heat, until carrots are fork tender.

TRANSFER mixture to a blender, or use an immersion blender to blend soup completely. Then return to pot over low heat.

STIR in evaporated milk and cook 2-3 minutes.

PLACE soup in serving bowls and serve warm.

*This soup can also be served chilled.
