SET ramekins on tray and make sure they are clean.

COMBINE milk and gelatin in small bowl and let gelatin soften. In a medium saucepan, combine heavy cream, vanilla, salt, and sugar, and bring to a simmer over low heat. Whisk in gelatin mixture off heat and then stir in chocolate. Pour mixture through a sieve into a heat-proof pitcher. Pour mixture evenly into ramekins.

CHILL panna cottas in refrigerator for at least 4-6 hours prior to serving. Top with whipped cream and/or fresh berries if desired.
