Chocolate Chip Cookie Mess
Put a cookie spin on the traditional Eton mess with this recipe from Adrianna Adarme of A Cozy Kitchen. It's easy to make and quick to assemble with the help of refrigerated cookie dough.
Ingredients
- 2 large egg whites
- 2 teaspoons vinegar
- 1/4 teaspoon salt
- 1/4 cup white granulated sugar
- 1/2 teaspoon cornstarch
- 1 package NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
- 12 strawberries, hulled and sliced
- 2 cups whipped cream
Instructions
PREHEAT oven to 200° F. Line a baking sheet with parchment.
BEAT together egg white, vinegar and salt until very frothy. Slowly add sugar and corn starch until egg white is very shiny. Beat for 2 to 3 minutes more, until stiff peaks hold. Add egg white to the parchment and smooth out to a 1-inch thickness.
BAKE for 2 hours with the oven door slightly ajar, until crispy on top and slightly chewy in the center. When cooled, break up into pieces.
PREHEAT oven to 350° F. Prepare refrigerated cookie dough according to package directions. Store and save your remaining cookie dough for a later use. Cool on baking sheets on wire racks for 1 minute; remove to wire racks to cool completely. Crush up chocolate chip cookies.
ASSEMBLE, in bowls, by adding a few dollops of whipped cream to each bowl, along with a handful of crushed meringue, crushed chocolate chip cookies and a few slices of strawberries. Repeat until you have two to three layers.
