COMBINE morsels and evaporated milk in small, heavy-duty saucepan over medium heat. Cook, stirring and then whisking frequently for 2 to 3 minutes or until the morsels are completely melted. Stir in salt and reserve.

PREPARE 1 cup of steel-cut oats following the directions on the package. Stir in a generous pinch of salt, maple syrup. Divide the oatmeal between four bowls.

SWIRL in the desired amount of pumpkin spice sauce, top with the pecan, ginger pieces and/or raisins, if desired and serve. Refrigerate any remaining pumpkin spice sauce and warm gently before serving.

NOTES: The oats can be made the night before and warmed up in the morning. Extra sauce can be kept in the refrigerator for up to 5 days.
