Ingredients

  • 3/4 cup organic or washed raw brown sugar
  • 3 tablespoons tapioca flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 cups unsweetened almond or soy milk
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 1/2 teaspoon vanilla extract

Instructions

WHISK brown sugar, tapioca flour, cinnamon, ginger and clove in medium sauce pan. Slowly stir in almond, then add pumpkin and vanilla extract until combined.

COOK over medium heat, stirring constantly, for 10 to 12 minutes or until mixture thickens. Spoon pudding into custard cups or ramekins. Serve warm or cover with plastic wrap pressed on top of pudding or refrigerate until ready to serve.
