Pumpkin Cheesecake Pops


  • 1 (17 3/4 oz.) LIBBY’S® Pumpkin Cheesecake Kit
  • 4 tablespoons butter, melted
  • 1 pkg. (8 oz.) cream cheese, at room temperature
  • 25 lollipop sticks
  • 2/3 cup NESTLÉ® TOLL HOUSE® Premier White Morsels
  • 2 teaspoons vegetable oil


PREHEAT oven to 350° F. Line 8-inch-square pan with foil; lightly grease.

COMBINE butter and Crust Mix in small bowl until well blended. Reserve 2 tablespoons of crust mixture for topping; remaining crust mixture will be used in the filling.

BEAT cream cheese and Filling Mix in large mixer bowl on Medium speed for 4 minutes until light and fluffy. Stir in LIBBY’S® 100% Pure Pumpkin*. Fold in remaining crust mixture. Spread into prepared pan. Smooth top with spatula.

BAKE for 28 to 30 minutes or until edges of cheesecake are set but center still moves very slightly. Remove from oven to wire rack. Cool for 1 to 2 hours. Cover; refrigerate for at least 2 hours. Lift out by foil edges to cutting board. Carefully remove foil. Cut into 25 squares.

LINE baking sheets with wax paper. Insert lollipop stick into side of each square. Place on prepared baking sheets.

MELT morsels and vegetable oil in uncovered, microwave-safe bowl on HIGH power for 40 seconds. Stir for 30 seconds. If necessary, microwave at additional 15-second intervals, stirring vigorously after each interval until smooth. Dip one side of pop 1/4-inch into melted morsels, scraping excess against side of bowl. Immediately sprinkle with some of reserved 2 tablespoons of crust mixture. Place pop on prepared baking sheet. Repeat with remaining pops.

FREEZE for at least 2 hours. Let stand at room temperature for 10 minutes before serving. Store frozen pops tightly covered in freezer for 1 week.

*The 8-oz. can of LIBBY’S® 100% Pure Pumpkin included in this kit contains 1 cup of pumpkin.

• 1 package (8 oz.) 1/3 less fat cream cheese (Neufchâtel) can be substituted for the cream cheese.
