  • 1 (17 3/4 oz.) LIBBY’S® Pumpkin Cheesecake Kit
  • 1 medium apple, peeled and cut into 1/4-inch slices
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons butter, melted, divided
  • 1 pkg. (8 oz.) cream cheese, at room temperature
  • Caramel ice cream topping (optional)


PREHEAT oven to 350° F. Unlatch bottom from 9-inch springform pan. Place piece of foil over bottom of pan. Place ring on top of foil; latch pan. Wrap foil around outside of pan. Covering bottom piece of springform pan with foil helps ease release of apples and cheesecake later.

COMBINE apple slices, sugar and cinnamon in small bowl. Spread 2 tablespoons melted butter over bottom of pan. Arrange apple slices over butter. Combine Crust Mix with remaining tablespoon of melted butter in small bowl. Sprinkle crust mixture over apple slices; press lightly.

BAKE for 5 minutes.

BEAT cream cheese and Filling Mix in large mixer bowl on Medium speed for 4 minutes until light and fluffy. Stir in LIBBY’S® 100% Pure Pumpkin*. Spread filling over prebaked crust mixture and apples. Smooth top with spatula.

BAKE for 34 to 38 minutes or until edge of cheesecake is set but center still moves very slightly. Remove from oven to wire rack. Draw a knife around crust edge to prevent cracking. Cool for 1 to 2 hours. Cover; refrigerate for at least 2 hours or overnight.

TO SERVE, loosen foil and remove side of springform pan. Place serving platter over cheesecake; flip quickly. Remove bottom of pan. Carefully remove foil. Replace any apple slices that stuck to the foil. Drizzle each serving with caramel topping, if desired.

*The 8-oz. can of LIBBY’S® 100% Pure Pumpkin included in this kit contains 1 cup of pumpkin.

• 1 package (8 oz.) 1/3 less fat cream cheese (Neufchâtel) can be substituted for the cream cheese.

• Cheesecake can be refrigerated up to 3 days.
