Do you have a minute?...I have a confession and need to be honest with you.

On Monday, I forgot to add two and a half cups of dark brown sugar to the batches of Salted Caramel Dark Chocolate Cookies we made.

Here’s the thing though, they still tasted delicious (as confirmed by a blind taste test). The beautiful thing about this recipe is that it uses unsweetened cocoa powder and dark chocolate, both with a distinct and bitter flavor leaving room for you to sweeten to taste. Mistakes like this one have brought me some of my favorite recipes, and if I were to bake the cookies again, I’d try adding the brown sugar and leaving out the granulated sugar. I think the brown sugar would add the right amount of sweetness without being too sweet while making the rich caramel flavors pop.
