MELT butter in medium saucepan over medium heat. Stir in flour. Gradually stir in evaporated milk. Cook, stirring constantly, until mixture comes to a boil. Add vegetables, chicken, broth and onion salt. This recipe helped with unexpected dinner guests one night, my neices and nephews are really picky eaters... so I was crossing my fingers that they would like this... I added 1/2 cup of cooked/steamed white rice to the recipe to fill it up. It was gone before I could blink. I made another potfull the next weekend and it went just as fast..
My husband and I love this soup! It was very easy to make, and could easily be adjusted with different vegetables, seasonings on the chicken, or even ground meat. It goes wonderfully with garlic bread and a salad. I will be making this again!.
I did the low fat version, but also added diced cooked potatoes and onions to the frozen veggies. Very happy with the results. Had some crusty wheat bread on the side for a quick dinner..
