Classic Texas Caviar
Level: Easy

Black-eye peas never tasted so good. This tasty combination of flavors makes a delicious, quick weeknight pre-dinner nibble with the I Can’t Believe They’re Not Fried Tortilla Chips, or as a salad flavoring and dressing. For a first-course salad, allow about 1/4 cup per serving; for a main-course salad, about 1/2 cup per serving.

  • Cooling time: 2 hrs refrigerating
  • Yields: 16 servings, 1/4 cup each
Everything You Need This Holiday Season
Ingredients
  • 2 cans (15.5 oz. each) black-eye peas, drained
  • 1 can (14.5 oz.) petite diced tomatoes, drained
  • 2 medium jalapeno peppers, stemmed, seeded and minced
  • 1 small yellow onion, cut into small dice
  • 1/2 yellow bell pepper, cut into small dice
  • 1/4 cup fresh cilantro leaves, chopped
  • 6 tablespoons red wine vinegar
  • 6 tablespoons olive oil (not extra-virgin)
  • 1/2 teaspoon each salt and ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons ground cumin

Directions

Mix all ingredients in a medium bowl. Cover and refrigerate for 2 hours or up to 2 days. Before serving, taste and add more vinegar, salt, or pepper, if needed. Transfer to a serving bowl. Makes 1 quart.

Easy to make, but needs a kick.

This recipe results in a very colorful mix of veggies and beans, however it ended up tasting a little sweet and not spicy at all. Maybe my jalapenos were on the mild side, but next time I'm adding more!.
