A tasty bar cookie with orange marmalade filling and crunchy crumb topping is perfect for friends or family. From the kitchens of Joan Mastroianni of Auburn, NY.

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE flour, sugar and walnuts in large bowl. Cut in butter and egg with pastry blender or two knives until mixture is crumbly. Reserve 1 1/2 cups of the crumb mixture. Press remaining crumb mixture into prepared pan. Spread marmalade evenly over crumb mixture in pan, leaving 1/2-inch border. Sprinkle white morsels and semi-sweet morsels evenly over the marmalade. Sprinkle reserved crumb mixture evenly over the morsels.

BAKE for 45 to 50 minutes or until top is light brown. Cool completely in pan on wire rack. Cut into bars.

Something different

The combination of orange & chocolate in this recipe reminded me of the Jaffa Cakes I'd tasted in England, so I emailed the recipe to my daughter, who lives in England, thinking she might like to serve it when entertaining her friends at tea. We prepared the recipe together during my visit last week. It met with mixed reviews; she and I love it, but my husband wasn't too enthusiastic about the taste of the marmalade. She & I decided it could be just as tasty for finicky eaters like her father by substituting raspberry or apricot preserves for the marmalade. She & I definitely will be making this recipe again not only in it's original version, but also with the variations we suggest, as it is something a bit different from the ordinary..
