This soup is sure to warm you up on a cold day.
MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper. Top each serving with bacon, cheese and green onions, if desired. VARIATION: For a different twist to this recipe, omit the bacon, cheddar cheese and green onions. Cook 2 tablespoons shredded carrot with the onion and add 1/4 teaspoon dried dill to the soup when adding the broth. Proceed as above.

My family and I love this soup. With some shredded cheese and turkey bacon crumbled on top it makes for a good meal. I use green onions for a topping as well when I eat my soup. For the recipe I find using butter makes for a better soup and when the salt and pepper are added, I also add some dried chives. This is an excellent soup that my family and I have enjoyed for over a year and a half now. when it comes time for soup this one usually wins over my broccoli cheese soup..
Really good soup, my wife loved it..
My husband is a connoisseur of Potato Soup. For several years I have been looking for a good potato soup recipe with no luck. As soon as I read this recipe I knew it was the one I had been looking for. I am incapable of adequately describing how delicious this soup is. My husband always begs me to made a double batch. It is so quick and easy to make I have even taught my husband how to make it! I probably make this soup once a month. It makes a great light lunch on the weekends..
