Molasses Ginger Cookies

This is an old family recipe that is always a favorite. We loved making them when we had helpers working our farm because it makes a huge number of cookies!!


5 c. flour
1-1/2 tsp. salt
6 tsp. baking soda
1 tsp. cloves
1 tsp. ginger
1 tsp. cinnamon
2 c. shortening or lard
3 eggs
2-1/4 c. sugar
3/4 c. molasses


Preheat oven to 375º F. Cream sugar, shortening, and eggs. Add the remaining ingredients by hand. Form dough into balls the size of a walnut. Roll in sugar. Bake on parchment-covered cookie sheet at 350º - 375º F., 10-15 minutes. They may look like they are too soft but remove from oven anyway, or they will get too crisp.
