Red Velvet Cupcakes for Valentine's Day

Red Velvet Cupcake Recipe
1 cup plus 2 Tablespoons flour
2 Tablespoons cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/4 cup butter, softened
2 eggs
1 Tablespoon red food coloring
2 teaspoons vanilla
2/3 cup buttermilk ( I substitute regular milk with teaspoon of vinegar mixed in)
Heat oven 350. Line muffin pan with paper liners. In medium bow; mix lour, cocoa, baking soda and salt.
In large bowl beat sugar and butter at medium speed until light and creamy.. Add eggs one at a time beating well after each. Beat in food coloring and vanilla. Beat in flour mixture in three parts alternating with milk, just until blended, beginning and ending with flour. Spoon into muffin cups.Bake 25 minutes or until toothpick comes out clean. Cool
FROSTING
6 0z. cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
3 to 31/4 cups powdered sugar
Beat cream cheese and butter add vanilla, at low speed beat in 3 cups of powdered sugar adding additional sugar if needed for spreading consistency. Frost cupcakes, garnish with sprinkles if desired. Makes 12
