Ingredients
8 slices bacon
1 cup finely chopped onion
1/4 cup chopped green pepper
1(1 lb) can tomatoes
3/4 cup uncooked rice
1 teaspoon salt
dash black pepper
3 Tablespoons brown sugar
1 teaspoon Worcestershire sauce
1/2 cup chili sauce, optional
Directions
Cook bacon and set aside. Pour off half of the fat.Cook onions and green pepper in drippings just until tender, but do not brown. Add the rest of the ingredients.. Cover. Simmer for 45 minutes. Stir once in a while and add more water if needed. Crumble the bacon on top of the finished dish. This makes 6-8 servings.
I leave out the chili sauce, unless I want it to taste like a Spanish rice dish.
