2 oz. cream cheese
1/4 cup finely chopped red, yellow, or green peppers
2 Tablespoons minced onion(or onion salt to taste)
1/4 teaspoon garlic salt
1 1/2 cup shredded Mozzarella cheese(divided)
1 1/2 cup spaghetti sauce
4 small chicken breasts( pounded to 1/4 inch thickness
Turn on oven to 400 degrees F.
Combine first four ingredients. Stir in 3/4 cup mozzarella cheese.
Place pounded chicken on work surface. Top with the cheese mixture, divided evenly among the four chicken pieces. Tightly roll up each breast, tucking in ends of chicken to completely enclose filling. Place seam-side down in a 9" baking pan sprayed with a cooking spray.
Pour spaghetti sauce over all of the breasts. Cover with foil.
Bake 30 minutes or until chicken is done (165 degrees F) Sprinkle with the rest of the mozzarella cheese. Bake uncovered about four more minutes, or til cheese is melted.
Serve with cooked spaghetti pasta or linguini. You can add pepperoni to the filling if you desire.
