Make on top of the stove in about 10 minutes! Very tasty.


1# pork tenderloin cut into 1/4" slices
1-2 Tbs vegetable oil
2-3 cloves of garlic, minced
1 16 oz jar of salsa
1/4 cup peach jam


Saute pork in oil in a large skillet for 4 minutes. Add garlic, cook and stir 1 minute longer. Stir in salsa and preserves (add amount of each to your own taste). Bring to a boil. Reduce heat, cover and simmer for 2 minutes or until meat is no longer pink. (I often cook uncovered so that the sauce thickens.

Good served over hot rice.

Serves 3-4
