Caramel Apple Muffins

Easy to make and delicious.


2 cups flour
3/4 cup sugar
1/4 cup butter, melted
2 1/2 tsps. cinnamon
2 tsps. baking powder
1/2 tsp. salt
1 egg, lightly beaten
1 cup milk
1 1/2 tsps. vanilla
1/2-3/4 cup peeled and chopped apples
12 diced caramels


Combine flour, sugar, baking powder, cinnamon and salt.
In another bowl, combine egg and milk. Stir in butter and vanilla.
Add flour mixture and stir just to blend.
Stir in apples and caramels.
Spoon into prepared muffin tins.
Sprinkle with cinnamon and sugar (optional).
Bake at 350 degrees for 25 minutes.
