Pick over the beans and discard any broken ones. Rinse the beans in cold water then cover with fresh water in a dutch oven or 5 quart pan. Let soak 4 hours or overnight. Drain and cover with fresh water and bring to a boil over medium heat, reduce to a simmer. Add the ham and boullion cubes and cook 1 1/2 hours, then add the remainder of seasonings. Cook an additional 1-2 hours until the beans are tender and thickened slightly. Check about every 30-40 minutes to see if an additional cup of water is needed. Add salt to taste at the end of cooking.
