Mini-meat loafs

We make these very often for our supper meals. They are spicy and just the right size for each person. They only take about 30 minutes from start to finish, including cooking time.


3 pounds ground beef
1 stack of saltine crackers (crushed in bag)
1 onion (chopped)
2 eggs
1 can salsa or tomatoe sauce if you don't like spicy
salt, pepper and garlic to taste
rectangular shapes of foil paper to wrap the mini loafs in


Mix the meat and the dry ingredients together in a large bowl and then make a well in the middle and add eggs and salsa (mild or hot) and mix up well. Put some meat on each foil paper and form a mini loaf with your hands, wrap up and bake at 350 degrees for about 20 minutes, depending on the size of your mini loafs. Once out of the oven let set for just a few minutes and then serve, being careful as you take it out of the foil it may have a little grease that has cooked out of it, if you want the loaf to be more browned undo the foil for the last five minutes of cooking. We top ours with "Red eye Gravy" Enjoy
