Dutch Croquettes

Dutch Croquettes

These take a little planning ahead but are well worth it. The recipe makes a lot so it is good for a party or larger get-together. They can be frozen then reheated in the oven when needed.

Ingredients

1 lb. Italian sausage
1 lb. ground beef OR ground turkey
1 pkg. meatloaf seasoning mix
1 pkg. dry onion soup mix
3 tbsp. dried chives

Sauce

1/4 c. butter
1/2 c. flour
1 c. milk
1 c. beef stock
3 tbsp. dried chives

Breading

2-3 c. flour
3 eggs
3 tbsp. water
2-3 c. dried breadcrumbs

Vegetable oil, for deep frying

Directions

1. Brown and cook sausage and ground beef in large frying pan. While browning, add soup mix, meatloaf seasoning and chives.

2. Sauce instructions: melt butter in separate
saucepan.

3. Add flour to butter, stirring well.

4. Add milk and beef stock to butter mixture.

5. Stirring continually, cook until thickened.

6. Add sauce to meat mixture.

7. Let cool in refrigerator (usually overnight).

8. Shape meat mixture into 2 inch logs (croquettes).

9. Make egg mixture by mixing eggs and water together with whisk until blended.

10. Place on separate dinner plates: flour, egg mixture, and fine breadcrumbs.

11. Roll croquettes into flour, then egg mixture, then breadcrumbs. May repeat if desired.

12. Cool again in the freezer, or refrigerator, until hard but not frozen.

13. Deep fry at 375 degrees in hot vegetable oil until browned, 4-6 at a time, about 3 minutes.

14. Serve heated.

Makes 18 servings (45-50 croquettes)
