Homemade Onion Rings from scratch

These are large yellow onions that are battered and then deep fried to a crispy golden brown. They can be served as a side dish with sandwiches, burgers or even steaks. Also as a snack just to munch on during the football games or a movie.


4 large onions (Peeled and sliced and cold)
4 large eggs (beaten well)
1 can carnation evaporated milk (undilute)
2 cups of flour ( to dip onions in)
1 Tablespoon of sugar (optional)
salt (to taste)
pepper (to taste)
grease (for frying)


Cut and peel the onions removing the thin skins that are in between the rings also. Separate into single rings, Once you have this done put the onions on a pan and set in the refridgerator to get very cold (NOT THE FREEZER). While they are getting cold get the eggs and milk and mix together adding the sugar, salt and pepper, (we add garlic powder to ours too when we leave out the sugar). Once this is mixed up well get out the flour and put it into a shallow pan to dip the onion rings in. Get the onion rings out of the refridgerator and dip each ring into the egg and then the flour and then the egg and then once more in the flour. Place the onion ring up on the side of the pan so it seems like it is standing up. Each one should be about half on the one before it. Once they have all been dipped put them back into the ice box to stay cold until you get the grease ready to fry them. Use fresh grease that is very hot. Fry and drain on a paper towel and serve hot and enjoy. I try to make them a day ahead of when I need them so it is not as much work all at one time. It is worth the effort as they are delicious.
