Allow these ribs to marinate overnight, for best flavor and tenderness.


2 slabs pork ribs
1/8 cup molasses
1 teaspoon chili powder
1/2 teaspoon cayenne pepper [optional]
1/4 cup tomato catsup
1 tablespoon red wine vinegar
1/2 teaspoon salt

1/2 cup catsup
1 teaspoon Liquid Smoke sauce
1 tablespoon red wine vinegar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon cayenne


Boil ribs for 15 minutes, then remove kettle from heat, leaving ribs in water for 5 more minutes.

Remove ribs from water, pat dry with paper towel, cool to room temperature and place in a sealable plastic bag, along with marinade. Store in the refrigerator overnight. Do not reuse marinade.

Next day, place marinated ribs on rack in roasting pan. Bake at 350 degrees for 90 minutes, turning halfway through. Remove from oven, brush with sauce. Bake an additional 20-30 minutes, until ribs are very tender. Cut into portions, and serve with sauce on the side. Great with potato salad.
