Ingredients
1 quart frozen berries [strawberries, raspberries, or sweet cherries] Reserve a couple of berries for a garnish, well-chilled but not frozen. May leave stems on.
1 large box gelatin in a complementary flavor
2 cups boiling water
8 ounce container whipped topping
Directions
Pour dry gelatin in a mixing bowl--not the bowl you will chill and serve it in. Pour hot water over gelatin, and stir until dissolved. If some gelatin remains undissolved, place the dish in the microwave, and heat for 30 seconds, then stir again until the mixture is clear.
Place the frozen berries in the bowl you intend to chill/serve the gelatin. Pour clear gelatin mixture over the berries. Stir gently to break up any clumps of frozen berries. Chill until somewhat thickened, about 30 minutes.
Stir in HALF the whipped topping, very gently.
Chill until set, another half to one hour. Spread remaining whipped topping over set gelatin.
Just before serving, garnish with reserved berries, and cut into eight even portions.
Refrigerate until time to serve.
