Ingredients
gravy:
2 cans tomatoe sauce
2 cups of water (canned milk if you want it more creamy)
2 Tablespoons cornstarch
salt, pepper (to taste)
Meat loaf:
3 pounds of ground meat
1 onion chopped
1 bell pepper chopped
1 stack of crackers
1/4 cup of oatmeal (uncooked)
seasoning salt, pepper (to taste)
1 can salsa
2 eggs
Directions
meat loaf:
In a large bowl crumble the ground beef up and all the eggs and spices. Mix well, crunch up the crackers while they are still in the long package and then add them to the meat mixture, add oatmeal and mix well, add the chopped onion and chopped bell pepper and the salsa and mix it all up well. Put into a baking pan and cook until it is done (about 30 minutes). The time depends on what size pan you uae and how much you make.
While the meat loaf is cooking make your gravy as follows:
Put the two tablespoons of corn starch into a cup and add part of the two cups of water to mix it up well. Get a cast iron skillet and put the tomatoes sauces and the rest of the water and spices in the skillet and turn on the heat. As soon as you see it hot then add the cornstarch mixture to the skillet and stir until it thickens. If it gets too thick just add a little water. You can use canned milk if you want it to be more creamy and to add extra calcium to your diet. Once the meatloaf is done you slice it and pour gravy over the slices and serve it. The gravy is also good over the mashed potatoes too.
