Directions
beat the eggs and add milk and sugar to it. Sift the flour, salt and baking powder in separate bowl. Add this to the egg mixture gradually, stirring it as you go. Batter should be smooth, but not to thick. You will need a funnel with an opening that is about 1/2 inch wide and large enough to hold 1 cup of batter. Put your finger over the hole at the bottom of the funnel and add batter (1 cup) and hold over the cast iron skillet that has hot grease in it. BE CAREFUL and gentle let go of the funnel and let batter go into the skillet making a circular motion so you will form a ring of the batter going back and forth. It should be about 6 or 7 inches round. When the bottom side is golden brown then turn it over and cook the other side. When it is browned also take the cake out of the grease and drain on a paper towel and then sprinkle powdered sugar over it. We like to put strawberry glaze over ours also.
