Eggs in the nest

This is an easy and quick breakfast or anytime snack. When my girls were younger they would make this for me and bring me coffee and "eggies" for a breakfast treat on Mothers Day. Everyone in our family loves them and makes them often.

Ingredients

Recipe for one person...easy to make for many also.

2 slices bread
2 eggs
butter
grease or non stick spray for griddle or skillet

Various toppings you might like to add:
your favorite cheese
salsa
syrup or honey
onions
bell peppers
chopped tomatoes

Use your imagination to make your eggs in the nest unique!

Directions

Take two slices of bread and make a hole in the center of each one, Butter BOTH sides of each slice of bread and put on griddle to brown, once browned turn bread slices over and the crack an egg into each hole of your bread slices, Cook egg and then turn over one more time to cook the other side of the egg. Take off gently and put onto a plate and add your favorite toppings and enjoy. HINT: I think it is better if you toast the bread really brown but not burned. It is your choice, you can add bacon or sausage to round out the meal if you want or just serve the egg on toast and then enjoy it and have a good day.
