Ingredients
12 dinner rolls, split
1 lb. ground beef, shaped into 12 thin patties
1 small onion, peeled and minced
36 dill pickle slices
1-2 tablespoons yellow mustard
1-2 tablespoons tomato catsup
waxed paper
Directions
Heat a heavy skillet over medium heat. Add six patties, allowing space between them. As soon as they brown, about two minutes, turn them and brown other side. Remove to a warm platter; cover platter with a pan lid.
Pour grease, if any, from skillet, and wipe with a paper towel. Re-heat skillet over medium heat. Fry remaining six patties as directed above. Remove from skillet to the warm platter and re-cover to keep warm.
Without draining grease from skillet, add minced onion and reduce heat to low. Saute for three minutes; do not brown. Use a slotted spoon to remove onions, leaving grease in skillet. Alternatively, pour onions, grease and all into a strainer set over a bowl to drain.
Assemble burgers: Open dinner rolls, place a cooked pattie on each. Top burger with a few sauteed onion bits, three pickle slices, and a bit of mustard and catsup. Wrap each burger in waxed paper.
For party panache, serve a burger--or more--in an appropriately themed paper sack, along with a sturdy napkin. These burgers are messy and delicious!
