Ingredients
Package of frozen roll dough, spread out on a baking sheet and thawed, covered, overnight in the refrigerator
2-3 ounces thinly-sliced pepperoni
2-3 ounces finely-shredded Italian blend or mozzarella cheese
1 teaspoon olive oil
flour for dusting rolling surface, 1 tablespoon
Directions
Dust board or other rolling surface with flour. Dust rolling pin as well. Flatten thawed risen pieces of dough with your hand, then roll out to a circle with 1/4 inch thickness. On half of the surface, place a piece or two of pepperoni, and a small amount of cheese. Brush edge of unfilled half of dough lightly with olive oil. Press halves together, sealing edges. Brush top of calzone with oil, and sprinkle with a small pinch of dried thyme or other favorite herb. Bake in preheated 375 degree oven for 10-12 minutes, until golden. Allow to cool 5 minutes before cutting. Use scissors or a pizza cutting wheel to cut in half for serving. Makes 12 calzones.
