Slow Cooker Tomato Topping for Brschetta

This also makes a great topping to spoon over chicken breasts as a sauce. Fast and easy to make when you need something fast when your entertaining. Serves 8

Ingredients

6 medium tomatoes, peeled, cored, seeded and diced
2 celery stalks, trimmed and chopped
2 shallots, chopped
4 pepperoncini peppers, chopped
2 teaspoons tomato paste
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
8 slices country bread or other large round bread
2 cloves garlic

Directions

Drain any tomatoes juices. Combine all ingredients except for garlic and place in slow cooker. Cover; cool on LOW 45 minutes to 1 hour. Toast bread. Immediately rub with garlic. Spread tomato topping on bread. Serve immediately.
