Slow Cooker Chicken and Sweet Potato Stew

This stew is chicken and sweet potatoes. It makes a hearty meal. Serve with crusty bread. Serves 6


4 boneless skinless chicken breasts, cut into bite size pieces
2 medium sweet potatoes, peeled and cubed
2 memium gold potatoes, peeled and cubed
2 medium carrots, peeled and cut into 1/2 inch slices
1 can (28 ounces) whole stewed tomatoes, undrained
1 teaspoon salt
1 teaspoon paprika
1 teaspoon celery seeds
1/2 teaspoon pepper
1/8 teaspoon cinnamon
1/8 teaspoon ground nutmeg
1 cup fat free low sodium chicken broth
1/4 cup fresh basil, chopped


Combine all ingredients except basil in the slow cooker. Cover, cook on LOW 6-8 hours or HIGH 3-4 hours. Spoon into bowls and sprinkle with basil.
