My husband was recently diagnosed with diabetes, but he is a big breakfast eater, usually potatoes and eggs and tortillas, so I came up with this lower carb burrito. I make one batch of them and freeze them so he can eat them before work throughout the week.


10 whole wheat tortillas
2 1/2 cups egg subsitute
10 pre cooked turkey breakfast sausages
5 oz shredded low fat cheddar cheese
5 small creamer red potatoes
1 tsp olive oil
1/2 tsp garlic powder
1/4 tsp pepper


Preheat oven to 350 degrees.
Cut potatoes in half and coat them with oil and seasonings. Bake on baking sheet in 350 degree oven for aproximately 40 minutes or until potatoes are golden and tender.
Cook egg subsitute in nonstick pan coated with cooking spray. Heat up sausages and dice them. Warm tortillas on hot plate or frying pan, then fill them each with egg subsitute, sausage, cheese, and 1/2 of potatoe diced. Roll up and wrap in plastic wrap and freeze. Heat up in microwave when ready to eat
