Rhubarb Muffins

These are so very moist with just a touch of tartness.


1 1/2 Cup Brown sugar
1/2 cup veg. oil
1 egg
2 Tbs. vanilla
3/4 cup buttermilk (may use sour milk)
2 1/2 cup flour
1 Tbs. soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cup chopped rhubarb
1/2 cup chopped nuts


Cream sugar and oil, add egg. Mix buttermilk, soda and vanilla. Add to sugar mixtrue. Mix dry ingredients together then add to above mixture. Blend in rhubarb and nuts. Place in greased muffin pans. Bake at 350 degrees for 20 to 25 min. This makes about 2 doz. Freezes well.
