Cream sugar and oil, add egg. Mix buttermilk, soda and vanilla. Add to sugar mixtrue. Mix dry ingredients together then add to above mixture. Blend in rhubarb and nuts. Place in greased muffin pans. Bake at 350 degrees for 20 to 25 min. This makes about 2 doz. Freezes well.
