2 lbs lean ground beef
1 medium onion
4 potaotes cut into 1 inch cubes
4 carrots cut into 1 inch pieces
2 stalks of celery cut into 1/2 inch pieces
1/4 head of cabbage cut into chunks
(I use a variety of veggies in this soup depending on what is in season or what I have on hand. I have used cauliflower and broccoli, I have used frozen peas and carrots. You can mix and match adding what your family likes)
2cans dices tomatoes -juice and all
salt and pepper to taste as well as
1 cube beef broth seasoning
Brown ground beef with onion. In stock pot add ground beef with onion and desired veggies. Add canned tomatoes with the juice. Add enough water to completely cover. Add seasonings let simmer untill all veggies are tender. Usually around an hour. I often will bake corn muffins or a nice hearty bread to go with this soup. Yum!
