A favorite at our tailgating parties.


1 can black beans
1 can black-eyed peas
1 can white shoe peg corn
1 jar diced pimentos
1 can chopped chilis or banan peppers
1 cup chopped celery
1/2 cup chopped red onion

1 cup olive oil
1 cup white sugar
1/2 cup apple cider vinegar


Place all vegetables in a large strainer and drain well. Place into a large bowl and mix well.
Place olive oil, sugar and vinegar in a small saucepan and heat until sugar is dissolved. Pour over vegetable mixture, stir gently until all vegetables are covered. Cover and marinate overnight.
Drain and serve with chips (scoops work well).
