Ingredients
serves 8-10 as first course soup OR 4-5 as main course lunch or supper
1/2 cup medium barley
6 cups water
1C finely diced ham [use leftover ham from a Sunday or holiday dinner
1 medium onion, peeled & chopped
1/4C celery, chopped
2-1/2 C tomatoes
1 small bay leaf
1-1/2 tsp salt
1 tsp worcestershire sauce
Directions
Put all ingredients (except worcestershire sauce into a 3 Qt soup pot. Simmer 2 hours. **Remove bay leaf; add worcestershire sauce, stir & serve with [whole grain] crusty bread & butter.
